Tracy & Emma's Fresh Basil Tomato Bread Soup~pg. 115

La Dolce Vegan! Challenge:

The end of the month will be my one year anniversary of starting this blog. I started it with the intention of participating in the LDV challenge. But it has given me so much more incentive to eat and cook healthy and vegan than I ever thought possible! It's also wonderful to communicate with other vegans out there. So here is another recipe from the challenge:


I only had two tomatoes so I added a can of stewed tomatoes and reduced the vegetable stock by 1/2 C. I also had some garlic croutons I used instead of the bread. I'm so proud that I got to use some of my own homegrown basil! I have been babying that plant through these hot, summer days-a high today of 111 degrees and on Monday it's supposed to be 113! I am so thankful for A/C :) Anyway, the soup had a fantastic flavor but I don't really like soggy bread in my soup. I did eat two bowls of it though! I don't think my hubby thought too much of it either. Poor guy.

  1. Oh my goooossh! Okay, when you said you don't like soggy bread in your soup, I was thinking, "I do." Then it reminded me of a soup I've eaten before and now I must recreate it. If only I could remember what it was called...

    1. If you remember you'll have to give the recipe. Maybe I'll change my mind on 'soggy bread' in soup. :)

  2. Happy aniversary on first year of your blog! all the food you make looks amazing. How are you doing. you had said in a recent post you had surgery. Hopefully all is well!! I cant believe its been a year already since the la dolce vegan challenge started. Wow time flys when good food is involved. Have a great night!

    1. I've about run out of recipes to make from La Dolce Vegan. I want to start organizing some more recipes so I stay motivated. I might try to go through all of my 50 some vegan cookbooks and try at least one from each of them. Some of them haven't even been cracked open! I finally had back surgery on some herniated discs that have been messing me up for the last ten years. I would work out, get in shape, lose weight and then aggravate it again. It was like a vicious cycle over and over. I can't wait to start some yoga and pilates! :)
