Cheezburger Pie


I've still got a few recipes I want to try out of Betty Goes Vegan.
 This one took me right back to my childhood! 

Getting ready to make the pie. I used Amy's quarter pound veggie burgers. They didn't hold together as well as a Gardein burger or Boca burger would but still had great flavor. I haven't used Bisquick in a long time; glad to see it's vegan.

My veggie burgers kind of disintegrated. I only used half of a red onion. Her red onions must be really small because half an onion is alot!

I tested this after 25 minutes like the recipe said and thought it was done. But after cutting into the pie it needed to cook another 10-15 minutes.

Emily's "Meat" Loaf~pg. 166; Carmelized Onion & Fennel Mashed Potatoes

La Dolce Vegan! Challenge:

I have this recipe permanently marked in my cookbook. I have made it several times; I use it when I miss having 'real' meatloaf. I like when people ask me if I can eat meat. My answer is "yes, I can eat meat, I just choose not to eat meat." I grew up eating meat and potatoes, cooking meat and potatoes and I still crave meat and potatoes. I chose to give up the meat for the animals, for the environment and for my health. I remind myself of that whenever I think about eating meat again. But I still eat potatoes!! I used a recipe in "The Garden of Vegan", pg. 116-Carmelized Onion & Fennel Mashed Potatoes. A tasty alternative to plain mashed potatoes.

Curry Almond Burgers~pg. 160

La Dolce Vegan! Challenge: (There is no Vegan Culinary Institute website so I'm not going to reference it anymore. If it gets up and running again then I will gladly give it credit. We're on our own, baby!)

As you can see my burgers fell apart! So I just ad-libbed and turned them into "Hot Sloppy Curry". I made an 'off the top of my head' sauce of 2 Tbsp. apricot fruit spread, 1 Tbsp. tamari and 2 tsp. sriracha hot chili sauce. Tastes mighty fine! You could use less hot chili sauce depending on how spicy you like it.

I really like the taste of these curry 'burgers'. It will be easier when I make them again not messing with trying to form burgers.

Marianne's Goulash~pg 134

Vegan Culinary Institute La Dolce Vegan! Challenge:

I know this wasn't one of our required recipes, but I love to play with herbs and spices!

That's a big pot of goulash!
I have made this before and made a few adjustments. Well, as you can see I didn't have enough elbow macaroni so it's a combo of shell and elbow. I only used 1 1/2 Tbsp. of the spice mix; my husband doesn't like things too spicy! I like to use stewed tomatoes-I snip them up with my kitchen scissors. The mixture  seemed too dry for me so I added 3/4 cup of water. This  reminds me of my grandma. She would always make a big pot of goulash whenever we stayed with her. It's warm, comforting and homey. I think we will be having leftovers tomorrow! Good thing we have a catch-up weekend so I can spread things out.
