Chocolate Coconut Chia Pudding

I've had a bag of chia seeds in my fridge for awhile now. I've been trying to find new ways to eat them.



Found this great recipe from Dreena Burton for pudding!  It's sweetened with dates and then you stir in unsweetened coconut and mini chocolate chips. The chia seeds and dates thickens it up almost instantly and could be served right away but it tastes even better chilled.

Yum!

Tapioca Pudding for Two

Dessert! VegCookBook Club. The Vegan Slow Cooker:


Definitely adding this one to my 'make again' list! I love tapioca and haven't had any since going vegan. I put mine in the small slow cooker in the morning and then it was chilled and ready to eat after dinner. I sprinkled some nutmeg on top-yum! My hubby and I finished it off; well it did only make enough for two, right?! Next time I might try a different kind of milk-maybe rice or almond instead of soy to give it a whiter appearance and less soy taste.

Vegan Culinary Institute La Dolce Vegan! Challenge:

Dessert for two!
 I used strawberries, blueberries and raspberries.  I'm always hesitant to make cooked pudding but this was surprisingly easy and it tastes yummy. This will be a fun dessert to make for my grandkids.
