Vegan Sloppy Joes~pg 112

I had made these a long time ago and didn't care for the seasonings; too salty. I like my sloppy joes a little sweeter. I had a package of soy curls I hadn't tried using yet so I decided to try this recipe again and tweak a few things. Instead of using a large pickle (I assume it's a dill, she didn't specify) I used 2 Tbsp. of sweet pickle relish. After rehydrating the soy curls, I cut them up into smaller pieces. I tasted the mixture after simmering for awhile and decided it needed some more flavor so I added about 1/4 cup of Annie's BBQ sauce. Just right! I love the texture and taste of the soy curls in this; better than using crumbled TVP. Served my Sloppy Joes with some sweet potato fries. This recipe made alot so I froze the remaining mixture for a future quick meal.

Black Bean & Roasted Sweet Potato Burger~pg 133; Green Chili Guacamole~pg 231

Green Chili Guacamole
Love guacamole anytime! Two of my favorite ingredients are in this-cilantro and limes. I added a little salt to mine.

Toppings for the burgers~
romaine, red onion, tomatoes and yellow bell pepper

I doubled the recipe because I wanted to freeze some for later. There must be a misprint because direction #4  said to form six 6-ounce patties so I thought since I doubled the recipe it would make 12 patties. Well, I used my scales to weigh the mixture and I still only got 6 patties plus one small one. Hmm, I still froze four patties so I guess we're good. Love the flavor of these; they are kind of messy though. I would like to know how to get the outside of the burgers really crispy.

Wow! My burger looks as good as the one in the cookbook. For lunch today I spread some of the leftover guacamole on a sprouted grain tortilla-Yum!

Sloppy Jane's~pg 159

Vegan Culinary Institute La Dolce Vegan! Challenge:

It feels so long since I've posted a recipe. But, after a long weekend involving herniated discs, a trip to the ER, morphine and cortisone injections I am finally back. I just take long rests on the couch. I don't want to get too far behind!


I served this on toasted mini buns (not as much bread to eat!) I didn't have a large dill pickle so I used 2 heaping Tbsp. of dill pickle relish. I like the flavor of this but it's too spicy for my husband; next time I will cut down on the chili powder. Now it's time to recline again!
