September Craziness!

 ~ Happy Autumn Equinox! ~ 


We don't see too many leaves this color around here and the temps are still in the 100 degrees but things really get hopping this time of year. As you can see I didn't have too much success with Vegan MoFo! We spent a wonderful week in Iowa visiting my hubby's family; I have been busy making teas, incense and other goodies for a local craft show next month; babysitting grandkids and celebrating our oldest grandson's 4th birthday! The cooking I did do used a lot of convenience foods and whatever food I had left in the fridge and freezer after our Iowa trip. So, here's a rundown on the last two weeks! I did try four new recipes with mixed results.

 I found these StarLite cuisine frozen meals at Sprouts. They have a whole line of taquitos and enchiladas. I like to keep my freezer stocked when I don't have time to cook. Very tasty!

 ~ Sauteed Collards ~
I love collard greens! I'm always looking in my cookbooks for different ways to cook them. I found this recipe in Veganomican. Yum! I served the collards with some baked potatoes and Gardein Crispy Tenders.


~ Basic Guacamole ~
I had an avocado ready to expire! and this recipe is another one from Veganomican. Yes, it's really basic; lime (too much), onion, salt and pepper. But it was a quick, easy way to use up that overly ripe avocado. She does give optional ingredients to add like cilantro, jalapeno and garlic which I didn't have which would have spiced it up.


~ Spinach, Peppers and  Cherry Tomatoes with Penne Rigate ~
I was browsing recipes online and found this at vegetariantimes. I had some roasted red peppers I had frozen, so this was a quick meal to put together. Everything gets cooked in a skillet and then tossed with cooked pasta. I sprinkled some red pepper flakes on top for a little spice.

 ~ Hot Tamale Pie ~
I love a good tamale pie and sadly this one didn't turn out. The recipe is from Cookin' Crunk and sounded really good. I think I must have used cornmeal that was too fine because the cornmeal really never thickened up to the right consistency. The filling had pinto beans and lots of spice and was really delicious. I poured the cornmeal mixture over the bean mix and went ahead and cooked it. Not a success. It was like eating cornmeal mush mixed with chili. The flavors were good so that's the way I ate it. I would like to try this again with a different kind of cornmeal.

I was so excited to see these frozen tamales at Sprouts!

Easy to steam in the microwave.


 I served the tamales with some homemade Spanish rice and Smoky Collard Greens with Vegan Bacon from Betty Goes Vegan. Another convenience foods success!

Meatless Hot Dog

I made some Chili Dogs one night using Yves vegan hot dogs and a can of Sprouts spicy vegan chili. I had some hot dog buns in the freezer! and used those. I topped the chili dogs with some chopped onion and Daiya cheddar shreds and served them with some sweet potato fries!


My new favorite frozen "chicken". I used the Southwest Style to make some Chicken-Free Fajitas.

I sauteed a little red and yellow bell pepper in some olive oil along with the chicken-free strips. I would have used more peppers but that was all I had.


~ Chicken-Free Fajitas ~
I layered the sauteed chicken-free strips and bell peppers in a warmed flour tortilla then topped them with Daiya cheddar shreds, cilantro, green onions, chopped tomatoes and romaine lettuce and a few dashes of Tabasco sauce for some hotness! YUM!!!

Here's to a new week (hopefully with more fresh ingredients incorporated-hehe). Well, I did do some green juicing so that counts!

Lots of ingredients for dressing. Got to use my Vitamix blender to try this one out. Worked great! 



Love the flavor ~ sweet and tangy; tastes great on a mixed greens salad.

Black Bean & Roasted Sweet Potato Burger~pg 133; Green Chili Guacamole~pg 231

Green Chili Guacamole
Love guacamole anytime! Two of my favorite ingredients are in this-cilantro and limes. I added a little salt to mine.

Toppings for the burgers~
romaine, red onion, tomatoes and yellow bell pepper

I doubled the recipe because I wanted to freeze some for later. There must be a misprint because direction #4  said to form six 6-ounce patties so I thought since I doubled the recipe it would make 12 patties. Well, I used my scales to weigh the mixture and I still only got 6 patties plus one small one. Hmm, I still froze four patties so I guess we're good. Love the flavor of these; they are kind of messy though. I would like to know how to get the outside of the burgers really crispy.

Wow! My burger looks as good as the one in the cookbook. For lunch today I spread some of the leftover guacamole on a sprouted grain tortilla-Yum!

Asian Noodles with Black Vinaigrette

Now that the month is half over I'm finally sitting down to post. I did have trouble downloading my pics  so I had to get that figured out. New Year's goals:  I've been loving going to the gym and getting in shape on the Pilates reformer. Trying to get my back in shape after August's back surgery and drop those pesky pounds from laying around doing nothing while recuperating. I've also been stopping by the juice bar near the gym and getting a wheatgrass shot and a green juice 3 or 4 times a week! That wheatgrass is addictive. Since I do have a juicer (Jack LaLanne but I really want a Breville). I guess I need to try and make my own green juice. So I went to Sprouts Market today and stocked up on some organic veggies and green apples. We'll see how that turns out in the morning! 

 Asian Noodles (pg. 174) with Black Vinaigrette (pg. 226)

I love buckwheat soba noodles. The only ones I can find at the store though have egg whites in them. So I stock up on them online from Eden Organics. I substituted green cabbage for the Napa cabbage and used alfalfa instead of the other sprouts it called for. The Black Vinaigrette/Basic Asian Marinade is awesome! I used plenty of fresh ginger and garlic. Yum! I used the leftovers as a wonderful salad dressing. 


I cooked up some Gardein Chick'n Scallopini, sliced it and served it over the top of the salad. Of course mine was garnished with some hot Sambal Oelek chili paste. Wow, my mouth is drooling just writing about this salad; it's been 3 weeks since I've made it. I think I need to try this one again. :)

Warm Spinach-Artichoke Dip

I have to admit this wasn't my favorite vegan spinach artichoke dip I've tasted. I have made a previous recipe for the dip that I loved but do you think I can remember where I got the recipe?! That's one of the reasons I started this blog so I can easily find a recipe I've made in the past. :) I'll have to take some time and dig through my cookbooks and recipe binder to find it. If I do I'll share it with you. Anywhoo, about this recipe-I chose to use the 1/2 tsp. crushed red pepper and the 1/2 tsp. black pepper. Those two spices combined just masked all the delicious flavor of the artichoke and spinach and creaminess of the dip. We still ate it anyway. I tried some on bread and some on tortilla chips. And then I tried carrot sticks; they tasted the best with it so that was my supper!

The Battle of the Vegan Ranch Dressings

Just got Cookin' Crunk by Bianca Phillips from Vegan Crunk in the mail! My hubby is at the football game and I'm just sitting around watching random movies on TV. I was craving some veggies and ranch dip so I thought I'd try out her recipe for vegan ranch.

 
I followed the recipe for making it a thicker dip and not the dressing by leaving out the soy milk and vinegar. It should have said decrease the salt also because 1/4 tsp. salt is way too much for the dip. Duh, I should have figured that out for myself but didn't.  I added a tsp. of vanilla coconut creamer to sweeten it a little. Sorry, this ranch recipe lost. The winner so far is Veganize This! Ranch Dressing .

Served my coleslaw with chick'n nuggets, waffle fries and sauteed spinach with sweet mini peppers.

Toppings for Taco Salad~tomatoes, cucumber, green onions and Daiya Cheddar.




The basil dressing was a good choice for this salad.
The flavor and color reminds me of guacamole.

Edamame Hummus~pg. 62

La Dolce Vegan! Challenge:


Love this hummus! I've made it before at Christmas along with the Roasted Red Pepper Hummus and traditional chickpea hummus. The red, green and white make a pretty display. I only used 1/4 C. tahini and added 1/4 C. Vegenaise and reduced the oil to 3 Tbsp. instead of 4. I also decreased the salt. All of these recipes seem to have way too much salt for me. This hummus always reminds me of guacamole. Good with tortilla chips.

Sassy Sandwich Bread (pg. 271), Edamame Hummus, cucumber, red onion, mushrooms, tomato, and alfalfa sprouts. Messy but delicious!

Mushroom Pate'~pg. 60

I wasn't going to make this because my husband says he doesn't like mushrooms. Who's going to eat all of this then? But I went ahead and made it. I only used button mushrooms instead of shitake because I couldn't find any. It was delicious! Great flavor to spread on crackers, bread or whatever. I served it with the Sassy Sandwich Bread (pg. 271) and soup for supper. I told my husband it was a 'veggie' spread to put on the bread. He ate it and loved it! LOL!!

Faux Fish~pg. 286; Veganica.com Cajun Sweet Potato Fries~pg. 186

La Dolce Vegan! Challenge:


I breaded these in the Shook 'n' Cook Breading-pg. 56 and followed the directions for the Fried "Chicken" on pg. 289 to cook them. Excellent! I made a tartar sauce to go along with my Faux Fish:

Tartar Sauce:
1 C Vegenaise (or other vegan mayonnaise)
2 Tbsp. sweet pickle relish
1 Tbsp. minced onion
1 Tbsp. lemon juice
salt & pepper to taste
*combine all ingredients and chill at least an hour.


This is my second attempt to make these fries. The first time they were too oily and salty. This time I only used 1 Tbsp. of oil and they turned out much better. Delicious!

As much as I don't like making salad dressing, I really did like this one. Sweet and tangy; good combination.

Vegan Ranch Dressing!

Sometimes I miss good old ranch dressing on my salad or to dip veggies in. After the fiasco of buying an expensive bottle of vegan ranch that tasted like crap and I ended up throwing away I wanted to find a good vegan alternative. Ta-da! I found it! The recipe is from Veganize This! by Jenn Shagrin. Oooh, it's creamy and delicious and tastes just like bottled ranch dressing.

 
This will last for a couple weeks in the fridge but I usually finish it off in a couple of days! I like to eat it with lots of raw veggies-cucumbers, red, yellow, orange bell peppers, carrots, celery and also dried veggie chips. Yum!

I only made half of the recipe because I don't really like the taste of tahini. This dressing might be good mixed with some Napa cabbage, veggies and soba noodles. But in reality I'm probably not even going to use it. Can't get past the taste of the tahini.

Wolffie's Spinach-Walnut Salad with Raspberry Vinaigrette~pg. 78

Look at that luscious red raspberry dressing! Much better than store-bought varieties.



Love this recipe-I usually eat a big spinach salad for lunch every day so now I can use this Raspberry Vinaigrette for my dressing.
