Lentil Stew & Mess O' Greens

It's been a busy week! We welcomed a new granddaughter into the world; little baby Blake Lynn. She joins her big brothers James-3 1/2 and Max 2 1/2. Grandma is going to be busy babysitting! 

I found this Slow-Cooked Lentil Stew recipe in the McDougall Quick & Easy Cookbook. So easy to add everything to the Crock Pot and let cook all day. 


Ingredients for the lentil stew. Instead of a vegetable broth it uses 5 cups of V8 juice. 

This makes a Big pot of stew! The first night I served it over some brown rice. The V8 juice gives it a nice hearty flavor. I added 4 cups of chopped spinach for some contrast and extra nutrients. 

The next night I made this recipe for Mess O' Greens from Cookin' Crunk. Collard greens, liquid smoke and turnips.These are really tasty! You let them cook for a good 35 to 40 minutes. 


The Mess O' Greens tasted great with the Lentil Stew and brown rice. I still had some stew left so I put it in the freezer. Three nights of leftovers is too much for me!

This week I also made a favorite cool salad using buckwheat soba noodles.

I thawed out my previously frozen black beans and made a quick dinner along with some garlic bread.

Vegetable White Bean Hash

Leeks, red bell pepper, garlic, turnip, sweet potato....sounds like this would be a yummy fall weather meal. Ugh-then I added the zest and juice of one orange; neither myself nor my hubby liked that addition! It seems like quite a few of these recipes rely on some type of citrus to add flavor. Doesn't always work though. And I sauteed my leek and pepper in olive oil-I feel so naughty when I use oil and/or salt now. I'm about done with this cookbook for now. I'm eating healthy enough as it is; I need some oil, salt and spice. :)

Country Turnip Carrot Soup

The picture doesn't do this soup justice. It is delicious; especially now that the weather is finally cooling off. It is chock full of turnips, carrots, potatoes and leeks. I served it with "Wolffie's 'Buttermilk' Cornbread" from La Dolce Vegan (my favorite-ever-cornbread). I'm not printing these recipes because you need to buy the cookbook! All of Sarah Kramer's cookbooks are excellent. I use them the most out of all my approx. 50 vegan cookbooks! Alot of the cookbooks use too many ingredients, unfamiliar or hard to find ingredients, are too time consuming or make too many servings so I usually go back to Sarah Kramer's cookbooks! On the days we just make a dessert I'm going to fill in with some of her recipes from her other cookbooks; it takes alot of guesswork out of what to make for supper!
