Maple-Oat Banana Bread

It's been a long time since I've posted anything! These past few months have been rough since my sinus surgery in October. It takes a loooong time to heal from that and then I got sick on top of it all. This time of year is usually pretty bad anyway; I tend to hop on the bipolar rollercoaster for a few months and then everything evens off after the new year (fingers crossed!) I'm going to try and get the few new recipes I've tried posted in the next few days.

Still trying to use up all the frozen bananas I have in the freezer. Another banana bread recipe from Thug Kitchen this time.

This recipe used 2 cups oat flour along with a cup of whole wheat pastry flour and 1/3 cup maple syrup; hence the name of the recipe. I did have to add 1/2 cup of chopped walnuts so I guess I can add "nut" to that title!

Very tasty and didn't last long in our house!

Scrumptious Banana-Nut Bread & Ninja Turtle Power Smoothie

One of the few recipes from La Dolce Vegan I hadn't tried yet. I have a plastic bag full of frozen overripe bananas so it was convenient to thaw one out for this yummy bread. The recipe also calls for 1/2 cup silken tofu. I opened up the aseptic package took out 1/2 cup and then used the rest in my smoothie for the morning. We were babysitting the grandsons all day and knew they loved banana bread. All of the liquid ingredients are blended up in the food processor and then added to the dry. This bread was gone in two days! Time to make some more.

My smoothie~Vega One powder, maca powder, coconut water, kale, frozen fruit, silken tofu, mint leaves, and powdered wheatgrass. The grandsons love smoothies and I tried to convince them this was a ninja turtle power smoothie but they wanted nothing to do with it! hehheh

Blueberry Banana Bread Pancakes ~ pg. 41

VegCookbookClub August recipes from Betty Goes Vegan by Annie & Dan Shannon:

Nothing like the aroma of banana scented pancakes on the griddle! A late morning breakfast today. I keep overripe bananas in the freezer for recipes like this. The batter was quite thick; you can't pour it onto your griddle. I scooped some out and spread the batter out with the back of a spoon. You don't need much maple syrup as the banana and blueberries give these some natural sweetness. Two of these pancakes and you're ready to start the day. The recipe made about nine pancakes so I froze the rest for easy future breakfasts.

Kiwi Banana Muffins~pg. 130

VegCookbookClub February recipes from Color Me Vegan by Colleen Patrick-Goudreau:

GREEN

I wasn't a big fan of these. I had some bananas floating around in the freezer and some kiwis that needed to be used so what a perfect recipe, right? They're just kind of sticky and bitter tasting to me. But my hubby liked them so I guess he can eat them for breakfast! Not on my make-again list.

Daniyell's Banana Pancakes~pg. 40

La Dolce Vegan! Challenge:

I had to sprinkle some walnuts on top-tastes just like banana bread.
I like making pancakes because I can freeze the leftovers for future breakfasts.

Coconut Pie Pancakes~pg. 39

La Dolce Vegan! Challenge:

Not too sure about the texture of these but they tasted good, especially smothered in Earth Balance margarine and real maple syrup! I chose not to make the Economy "Maple" Pancake Syrup on pg. 40 because I have perfectly good real maple syrup and it seemed ridiculous to do that. If I ever run out of perfectly good real maple syrup I'll know where I can make a recipe for some. I froze the rest of my pancakes (it made 8) for future breakfasts!

Banana Chocolate Peanut Butter Strudel~pg. 227

La Dolce Vegan! Challenge:

I tried just a little taste. I wasn't sure if the bananas were cooked enough for me since I'm allergic to raw bananas. I think my bananas weren't ripe enough; not much banana taste. I sent some home with my daughter and my husband ate the rest. This was too messy to make and now what do I do with the rest of the phyllo dough? At least I can refreeze it.  Not adding this to my 'sweets' list!

Banana Pecan Pancakes~pg. 39

La Dolce Vegan! Challenge:

Tastes just like banana bread in a pancake! Put the leftovers in the freezer for future quick breakfasts.

Lindsey's Peanut Butter Cupcakes~pg. 239

La Dolce Vegan! Challenge:

I don't know why these are called 'peanut butter' cupcakes. They were more like banana cupcakes; maybe because I used an extra large banana in mine. Either way, they were still great!

I think I better send these to work with my husband; too dangerous to have around the house!

Wolffie's B'Nanner Bars~pg. 214

Vegan Culinary Institute La Dolce Vegan! Challenge:

Before getting into today's post I wanted to add another recipe to my revised calendar (see post from 10/10). My grocery store has soy eggnog in now! Yeah-I know it's a special treat but I miss the traditional eggnog and this is a great substitute. Anywhoo, I am going to make "Wolffie's Eggnog Muffins" page 273 on Sat., November 5th. Maybe I'll drink a cup of soy eggnog along with my Eggnog Muffins!

B'Nanner Bars

I chose to add the 1/4 C. chopped walnuts to my batter. These taste just like banana nut bread in cake form! I am going to try and save these for my husband as the waistband of my pants is getting a little tight. They must have shrunk in the wash! That's my story and I'm stickin' to it.

Day 1 Banana Blueberry Muffins-pg. 274

Getting Ready to Bake!
I made it! After doctors' appointments all morning, grocery shopping, and my car breaking down in 110 degree temps. with groceries in the trunk I still found time to make these muffins and supper. Whoo! Hoo! I am allergic to raw bananas but I can eat cooked bananas so I will be indulging in these.

My husband will probably finish off most of them.

Quick Fixins' for Supper
Baked potatoes topped with Amy's Vegan Chili, Daiya Cheddar Style Cheese, red onion and cilantro with a side of frozen mixed veggies.
