Pumpkin Pecan Bread

Another great recipe from Vegan Vittles.


I needed to use this can of pumpkin I had in the pantry and this recipe was really quick and easy. 


Hey, the bread actually rose above the pan! 


This bread is not overly sweet or laden with oil; a 1/2 cup maple syrup and only 2 Tbsp. of oil. Pecans and raisins give it extra texture and flavor. I sliced up the loaf and froze the portions in a bag. It quickly thaws out in the microwave for a tasty snack.

Bar-B-Q Chicken Sandwich and Coleslaw


Two more delicious recipes from Give Them Something Better. I love BBQ sandwiches and coleslaw and when I attend a big event it always seems to be the usual fare along with pinto beans so I'm left with nothing to eat.  Now I can enjoy this meat-free version anytime! 


The pre-soaked soy curls along with onion and green bell pepper. 


This recipe makes a very tasty BBQ sauce for the soy curls without all the additives in a store-bought bottle. 


The coleslaw is very easy to make. After shredding the cabbage in the food processor you add carrot, vegan mayonnaise, lemon juice, green onion, sugar and salt. Yum! It tastes just like my grandma used to make. The hubby really, really liked this meal. It's a keeper.

Noodles and Greens

Looking for recipes to use my new shipment of udon and soba noodles from Eden Foods and I found this one in Vegan Vittles by Jo Stepaniak. I've had this cookbook a long time and I still keep finding great recipes to make out of it. I'm challenging myself to not buy any new cookbooks! I've got so many that I have never even used yet. That's part of my New Year's resolution; I'm focusing on reading all of the books I have stashed in cupboards, bookcases and drawers and not buying any new ones. I've been using my local library again, too. So far, I've done really well. Yay! 





This is such an easy recipe, yet so tasty! The recipe calls for collard greens or you can substitute kale. I had some lacinato kale I used this time because I couldn't find any organic collard greens at the store. Instead of umeboshi vinegar I used plain rice vinegar. I've never tried the umeboshi but the rice vinegar worked just fine. Instead of the smoked tofu I used Cajun Baked Tofu. You shred it in the food processor and top the noodles and veggies with it. It was nice and spicy!

Applesauce-Oat Bran Muffins

 A tasty muffin recipe using the oat bran I had hanging out in my fridge. This one is from Moskowitz & Romero's cookbook Veganomicon. 



Lots of yummy ingredients~1 cup of applesauce replaces alot of the oil and the cinnamon, cardamom and nutmeg add a spicy goodness. 


Warm from the oven and slathered with Earth Balance margarine. I like to keep a bag of muffins, pancakes and/or waffles in the freezer for quick breakfasts.

Chik-Style Salad

I've been wanting to try this recipe using my Butler Soy Curls.  It is absolutely delicious! I crave chicken salad every once in awhile and this satisfies that craving. You can find the recipe here. 


The usual ingredients in a chicken salad-sweet relish, Vegenaise, garlic powder, celery, onion. It also has some Butler Chik-Style Seasoning to give it extra flavor.

White Beans with Swiss Chard and Rice

I decided not to participate in the Vegcookbookclub this month so I'm working on making some of the recipes I've had on my list for awhile. And, once again, I'm cleaning out my pantry, fridge and freezer. I've got lots of grains, beans and legumes I need to use up. This recipe is from Colleen Patrick-Goudreau's Vegan's Daily Companion.

Sauteing chard and onions. 



The recipe calls for 5 cups of vegetable stock. I love to use this Better Than Bouillon No Chicken Base. It is a lighter, more "chickeny" flavor than the darker vegetable stocks. This is more convenient than using a carton of vegetable broth. Sometimes I don't use it all and then it just goes to waste. With this bouillon you just mix up the amount you need and store the jar in the refrigerator. I have been able to find the Vegetable flavor at my Sprouts store but for the No Chicken flavor I have to order it online. 



Swiss chard, onion, garlic, beans and rice. So easy and so delicious! The hubby gave this one a thumbs-up.

No-Bake Pecan Chocolates


These decadent jewels are from Vegan Cookies Invade Your Cookie Jar.

If your sweet tooth is calling you, these will definitely answer! I had a jar of brown rice syrup which I never use and found this recipe. Ooh, dangerous. Only five ingredients; pecans, brown rice syrup, salt, vanilla and chocolate chips; and you've got a chocolatey, nutty, chewy, caramel confection. They do need to be refrigerated as they are kind of sticky.

Light and Fluffy Pancakes or Waffles

My yearly sinus infection finally caught up with me. I looked back at my records and it was exactly a year ago in March that I had it before. Ugh! Drinking lots of green juice; I finally broke down and had to get some antibiotics to knock it out this time. I've just been throwing together easy meals when I don't especially feel like even eating. I did make these pancakes a few days ago to keep a stash in the freezer.


Great cookbook~lots of easy, delicious recipes. 

A pile o' pancakes!



These truly are "light and fluffy" pancakes. They have an addition of a 1/2 cup of cornmeal to give them a little texture that an egg would do. I did add a little more water because the batter seemed a little thick. The hubby really enjoyed these; he said they tasted just like in a restaurant!
